Can You Freeze Raw Morels?
You can freeze your raw morels directly in your freezer. Be sure to use an airtight bag to ensure optimal freezing and avoid ice crystals.

Should You Cook Morels Before Freezing?
This solution is little used and yet it is an excellent way to preserve your morels! Indeed, to properly freeze your morels, you can sauté them in fat or blanch them in steam. These will be less loaded with water and thus, they will deteriorate less when freezing.
How To Cook Frozen Morels?
If your morels were cooked before freezing then all you have to do is thaw them gently before cooking them for about ten minutes.
On the other hand, if your morels were frozen raw. You will have to follow the following two steps:
1. Defrosting Morels
To thaw your morels, you can simply place them in a saucepan with lid, over low heat with a little fat in the bottom of the pan. Thus, your frozen morels will warm up very slowly and will end up thawing gently. You can then switch to more intense cooking.
2. Cooking Frozen Morels
The cooking time for raw morels does not change! Whether fresh, dried or frozen, they must be cooked for at least 20 minutes! Here, in the case of frozen morels, they must first be defrosted over low heat, before cooking over medium/high heat for 20 minutes.
