Criteria To Identify Morel Mushrooms

In order not to confuse the true Morel with the False Morel (Gyromitra), you must observe a certain number of criteria which are present on all the morels (conical morels and common morels). Thanks to these criteria, you can easily recognize morels and avoid confusion:

  • Cap with honeycombs: the cap is made up of well-marked honeycombs. In general, it is very firm and has a long central cavity. Its colors are numerous depending on the subspecies. This can range from yellow to black.
  • Stem: The stem is cream colored. It has a leathery appearance and has a central cavity. It is attached “at the bottom” of the hat.
  • Cream-colored flesh: the color of the flesh is also cream colored. Its color does not change.
  • Mild flavor: the taste of the morel is reminiscent of hazelnut, with a strong “umami” flavor.
